Ensure your oven is clean and free from any debris. Open the chimney and add 1-2 scoops of our Beech or Oak chips to the tray or grate taking care not to overflow in order to maximise airflow. Ignite using your preferred method of natural firelighter, newspaper or torch. Keep an eye on the fire spreading through the chips and adjust the airflow by opening or closing the oven door and chimney as required. Add more chips in order to maintain the desired temperature and remember chips burn quickly so be prepared to add more chips throughout the cooking process. Once at temperature allow the chips to burn down to create a bed of heated coals and you're ready to cook!
